Roast Beef Sandwich Recipe
Wondering what to do with that leftover roast beef? Well, here’s a roast beef sandwich recipe for those with a taste for the spicy.
This is a really quick and easy recipe that uses up those pieces of beef stored in the refridgerator.
Your going to need some mango pickle for the added extra spice. I recommend always having a jar in the cupboard as its great for ading to curries too.
How to Make a Roast Beef Sandwich
Ideally you do need quite thick slices of bread for this sandwich. I’ve used a white cob style loaf for my bread cut into around inch in depth slices.
Butter the bread single sdie for each slice. Add a layer of the mango pickle, as much as you like. I’ve used medium pickle which does have a bit of a kick to it.
Now layer some chopped red onion, followed by thin slices of cooked roast beef on top of the pickle.
Add several slices of tomato and finally add some leaf lettuce.
Cut your sandwich in half and serve. I think you’ll agree the mango pickle really does combine well with the flavor of the beef. Enjoy!

Roast Beef Sandwich
Ingredients
- Bread of your choice – 2 slices
- Mango pickle – medium hot
- Large tomato
- Leaf lettuce
- Butter
- Red onion
Instructions
- Butter each slice of bread on one side
- Spread mango pickle on one side of a single slice
- Add a layer of chopped red onion
- Add layer of thin cut roast beef
- Add sliced tomato
- Add lettuce
- Top with remaining buttered bread slice
- Serve
