Po' Boy Sandwich Recipe

We’re heading down to New Orleans today with a classic Po’ Boy Sandwich recipe that Bubba Gump would be proud of.

Now, if you can’t get hold of breaded shrimps, which are similar to prawns but salt water variety, depending on where you are, scampi makes a good alternative.

Ok, it’s time now to put on some Louis Armstrong, roll up our sleeves and get to making us a Po’ Boy.

How to Make a Po' Boy Sandwich

This is a very easy recipe to make. First we’ll start by preparing the special mayonnaise sauce.

Mix 1 tsp of Cajun spice with a generous amount of mayo, add some Tabasco sauce, plus a single tsp of horseradish sauce if you have some lying around.

Next up, is to place your breaded shrimp or scampi in the oven on a medium heat. Follow the guidelines on the packet for best results.

Take a French baguette and slice down the middle. Spread a generous amount of the mayo sauce we made earlier along both cut sides of the bread.

Finely chop some lettuce and sprinkle all the way along the baguette, followed by some gherkins.

Remove the breaded shrimp from the oven and layer onto our crispy lettuce and tangy gherkins.

Finally top with some slices of salad tomato, however many you like to your taste.

That’s it folks. We now have a classic Po’ Boy sandwich to enjoy.

Po' Boy Sandwich Recipe

Ingredients

  • French baguette
  • Breaded shrimp or scampi
  • Mayonnaise – At least 4 Tbsp
  • Tabasco sauce – to taste
  • Cajun spice – 1 Tbsp
  • Horseradish sauce – 1 tsp
  • Salad tomatoes – 2 medium size
  • Lettuce
  • Gherkins – to taste

Instructions

  1. Mix the Tabasco sauce, Cajun spice, horseradish sauce with the mayo
  2. Cut the baguette down one side
  3. Spread the mayo sauce mix onto the cut side of the bread
  4. Finely chop the lettuce
  5. Spread the lettuce over the mayo infused bread
  6. Add some gherkins to taste
  7. Place the breaded shrimp in the oven – follow the instructions on the packet
  8. Layer the hot shrimp onto the bed of lettuce and gherkins
  9. Top with slices of salad tomato
  10. Serve
