Coronation Egg Mayo Sandwich Recipe
If you love eggs then why not try this coronation egg mayo sandwich recipe. I’ve added a few extra ingredients that most of you have in your cupboard already to enhance the flavors.
How to Make a Coronation Egg Mayo Sandwich
We’re going to need 3 medium sized eggs for a round of sandwiches to serve up to 2 people.
Boil the eggs for 8 minutes. Remove from the hot water and rinse under cold water immediately. This lessens the chance of the cooked egg whites turning grey.
Peel the eggs now they have cooled down, in a bowl break the eggs into small pieces using a fork. Add the following ingredients to the bowl and mix together.
- 2 tbsp mayo
- ½ tbsp Greek yogurt
- ½ tbsp mango chutney
- ½ tbsp korma curry paste
- 2 spring onions (green onions), chopped finely
- 2 tbsp finely chopped coriander
Take 4 slices of bread and butter on one side of each. Add a generous amount of the egg mayo mix, spreading on one side of the bread. Top off with the remaining buttered bread slice.
As you can see I have carefully removed the crusts from my sandwich bread, ideal for those who like to be more delicate and refined.

Coronation Egg Mayo Sandwich
Ingredients
- 3 medium eggs
- 2 tbsp mayonnaise
- ½ tbsp Greek yogurt
- ½ tbsp mango chutney
- ½ tbsp korma curry paste
- 2 spring onions , sliced
- 2 tbsp chopped coriander
- butter or margarine
- 4 slices soft brown bread
Instructions
- Boil 3 medium eggs for 8 minutes
- Rinse cooked eggs under cold water
- Peel eggs
- Add eggs to bowl and break into fine pieces
- Chop green onion and coriander finely
- Add coronation ingredients to bowl and mix with eggs
- Butter 4 slices of bread on one side of each
- Spread egg mix onto one side of bread
- Top off with bread slice
- Serve
