Lamb Sandwich Recipe (Leftover Cold Lamb Inspiration)
Lamb lovers are in for a treat with this lamb sandwich recipe using leftover cold roast lamb. I’m using a half leg of roast lamb for my sandwich. You can use any cooked lamb joint that will slice into thin slices.
For our roast lamb sandwich a leg of lamb has been cooked in the oven with traditional seasoning along with rosemary.
Ingredients
- Sliced roast lamb
- Thick white sliced bread
- Butter
- Mayonnaise
- Grainy mustard
- Mint sauce
- Fresh watercress
Preparing The Sandwich
To start cut the cold roast lamb joint into thin slices. You’ll need around 300 grams for one sandwich or two pieces of bread.
With the lamb sliced up and ready. Now butter each slice of bread on one side. Spread the mayo over the butter. Use a butter knife if you have one in your kitchen.
Add a generous layer of the sliced lamb onto one side of the buttered bread. Now spread some of the mint sauce over the lamb as shown in the picture.
Mint sauce
Lamb and mint go well together. Mint sauce can be bought in any good supermarket or you could make your own fresh mint sauce if you fancy.
Fresh watercress always adds an essence of freshness to a sandwich. With that in mind we’re going to use fresh watercress by adding a layer onto the minted sliced lamb.
I’ve added grainy mustard to the second slice of buttered and mayo bread slice. You can leave this out if you wish.
The remaining slice of thick white bread now tops off the sandwich. Now cut the ready to eat sandwich in half and serve.
There you have it, a deliciously minty roast lamb sandwich with the added freshness of watercress.
Leftover roast lamb will freeze well if you place the lamb into a sandwich bag and wrap it tightly. Having cold cooked roast lamb in the freezer is always handy if you are stuck on what sandwiches to make for the coming days.
